As I walked into the Anaheim Convention Center for Natural Products Food Expo West 2009, I almost had to pinch myself to make sure I wasn’t dreaming. I’ve been to the Food Expos several times before, but this year was truly extraordinary. Gluten-free signs jumped out of almost every aisle and vendors that used to have small booths tucked away in the dark corners, now exhibited with grandiose displays with flashy videos, dancers and incredibly delicious food samples. But the best part was that everyone wanted to talk about the boom in the gluten-free marketplace.
